Egg Muffins with Vegetables

Breakfast time just got a whole lot tastier and healthier with our Egg Muffins. Loaded with veggies, protein, and a boost of Multivitamin Mineral Plus, these muffins are designed to keep your kids energized and ready for the day.

Plus, they're so fun to eat, even the pickiest eaters will be asking for seconds!


  • 8 large eggs
  • 1/2 cup diced bell peppers (various colors)
  • 1/2 cup chopped spinach
  • 1/4 cup diced onion
  • 1/2 cup hummus (choose your favorite flavor)
  • 1/2 cup diced ham or turkey
  • Salt and pepper to taste
  • Olive oil or non-stick cooking spray for greasing
  • Multivitamin Mineral Plus supplement (per the recommended amount)


  • Preheat Oven: Set your oven to 350°F (175°C). Grease a muffin tin with olive oil or non-stick spray.
  • Mix Eggs and Supplement: In a large bowl, whisk the eggs and mix in the recommended amount of Multivitamin Mineral Plus.
  • Combine Ingredients: Add the bell peppers, spinach, onion, hummus, and diced ham or turkey to the egg mixture.
  • Season: Season with salt and pepper as desired.
  • Fill Muffin Tin: Evenly distribute the egg mixture into the muffin cups, filling each about 3/4 full.
  • Bake: Bake for 20-25 minutes, until the muffins are set and the tops are slightly golden.
  • Serve: Let the muffins cool briefly before serving. Enjoy them warm for the best taste.
