Gluten-Free, Casein-Free Banana Oatmeal Cookies

Who says you can't mix a bit of health into your treats? Our Banana Oatmeal Cookies are a delightful blend of nutrition and taste, ideal for our special dietary kiddos.

We've stirred in My Spectrum Heroes™ Multivitamin Mineral Plus to make these cookies more than just a tasty snack. They're gluten, casein, and soy-free .

Ingredients:

  • 2 ripe bananas, mashed
  • 1 1/2 cups Oats, whole or steel-cut
  • 1/2 cup almond butter
  • 1/4 cup chopped nuts (like walnuts or almonds, optional)
  • 2 tsp vanilla extract
  • A pinch of cinnamon
  • Multivitamin Mineral plus (per the recommended amount)
  • Optional: raisins or dried cranberries for added sweetness

Directions:

  • Preheat Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • Combine Ingredients: In a large bowl, mix together the mashed bananas and almond butter until smooth. Add in the gluten-free oats, chopped nuts, vanilla extract, cinnamon, and Multivitamin Mineral Plus. If you're using raisins or dried cranberries, fold them in as well.
  • Shape Cookies: Drop spoonful's of the mixture onto the prepared baking sheet and flatten them slightly to form cookie shapes.
  • Bake: Place the baking sheet in the oven and bake for 15-18 minutes, or until the edges of the cookies are golden brown.
  • Cool and Serve: Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
