Crispy Chicken Nuggets

Crispy Chicken Nuggets

Is your child a fan of crunchy snacks? These Crispy Chicken Nuggets are just what you need! This easy recipe uses gluten-free and casein-free ingredients, making it perfect for children with autism or ADHD. Serve up a delicious, healthy meal that will keep them coming back for more.

Ingredients:

½ cup (112 g) ghee, melted

2 cups (150 g) crushed GFCF potato chips or cassava chips of choice

1 large egg

2 tablespoons (30 ml) Oat milk

1 pound (455 g) boneless, skinless chicken breasts, cut into 1½-inch cubes

Salt and pepper

Instructions:

  1. Preheat the Oven: Preheat your oven to 350°F (180°C, gas mark 4). Brush a baking sheet with 2 tablespoons (28 g) of the melted ghee.

  2. Prepare the Coating: Spread the crushed chips in a shallow dish. Beat the egg together with the Oat milk in a medium bowl.

  3. Coat the Chicken: Toss the chicken pieces in the egg mixture until thoroughly coated. Drop each piece separately into the crushed chips, cover them to coat, and then transfer to the greased baking sheet.

  4. Bake the Nuggets: When all the pieces are coated, drizzle the remaining ghee over the tops and lightly season with salt and pepper. Bake for 15 to 18 minutes, until golden brown.

  5. Serve: Serve with your favorite GFCF sauce or dressing.

Tips:

  • The chips can be quickly and easily crushed, either in the food processor, or in a zipper lock baggy with a rolling pin.

  • These nuggets freeze well after baking.
